Led by the Hotel’s executive chef Stefan Hogan, The Summer Kitchen brigade at the Corinthia Palace Attard, has crafted a menu the whole family will love. Highlights include their appetizer mezes of buttermilk-coated chicken wings with a blue cheese dip and celery sticks or the fritto misto with lemon mayo and parsley, followed by tagliatelle with ragù, mushrooms, pancetta, affumicata and cream or the stone-oven baked Campagnia pizza with roasted pumpkin purée, provola, ricotta salata and sage.
Salad-lovers are also well-taken care of thanks to favourites such as the vegetarian artichoke, pea, quinoa and summer herb salad with a lime dressing, while meat-lovers will relish the unrivalled flavours of striploin or rib-eye – perfectly cooked and seasoned on an open BBQ. In fact, there really is something for everyone, including very healthy choices, quick light bites and scrumptious desserts.
“Together with the Hotel, we have assembled a list featuring over 100 different premium wines, which is split into different, smaller lists at our various restaurants,” says Matthew Cuomo, the manager of the Wines Division at P.Cutajar & Co. Of course it is the setting of The Summer Kitchen that also makes it very special. Located in the heart of the Corinthia Palace Hotel & Spa’s lush gardens, this is a green oasis enveloped by tall trees and surrounded by flowers.
And to really make the most of that, the Hotel has also launched Lounge Wednesdays in the garden from 1 July, with live entertainment from some of Malta’s top musical performers, delicious platters from The Summer Kitchen menu, and a range of fresh and fruity cocktails to complete the perfect summer evening.
