olives 2You will need 400g plain flour, a pinch or two of salt, a sachet of bakers yeast, tablespoon of warm water, 300g pitted and chopped olives, and a teaspoon of olive oil, with a little extra for brushing.

Make sure the water is at room temperature and this to dissolve the yeast. Leave to stand for 30 minutes. Now, roll up your sleeves, mix the flour, salt, olive oil, yeast mix and combine well.

Knead for around 15 minutes till the dough is smooth. Put in a bowl and cover with a damp cloth – prove for at least 2 hours.
Once time is up, preheat the oven to 180’C and while it’s warming, knead the dough again, adding a sprinkle of olives and incorporating them. Now shape into rough sausage shapes and then pat down.

Brush a baking tray with olive oil and sprinkle some salt, before adding your flattened sausage shaped breads. Bake for 40 minutes. Yummy.
