Cheval Franc olive oil is aromatic, has a fruity bouquet with hints of almonds on the nose and a round, harmonious, buttery and bitter characteristic on the palate.
The olives are hand picked from olive groves found on the Cheval Franc estate owned by Anthony Cassar, located in the limits of St. Paul’s bay, where both
olives and grapes thrive. This is where the winery also carefully grows grapes used for the production of their premium single estate wine Cheval Franc D.O.K
Superior. The soil and climate requirements for both grapes and olives are very similar making this a perfect marriage.
Like grapes but with somewhat less delicacy, olives are crushed (or milled) and then pressed to capture the oil. The first press, which is the lightest, provides the best and most delicate oil. Subsequent pressings, sometimes using heat to aid extraction, add volume but extract more of the bitter and tannic phenolics from the fruit and even from the pits. Marsovin’s Cheval Franc Estate olive oil is made only from first press, cold press oil which is unfiltered to retain all the natural aromas, as a result sediments might be found at the base of the bottle.
