Cooking classes in the capital are available at the newly opened Mediterranean Culinary Academy. Based in Sapper Street at the top end of Valletta, lessons are either one off workshops or 4 evenings over 4 weeks.
A recent nose to tail workshop on rabbit taught how to use every inch of the animal with various techniques to maximise the yield, handle knives and identify the various cuts and organs, and resulted in 4 recipes.
The academy teaches in an informative manner with professional graphics, video and quality handouts. With three qualified chefs with international experience on hand, the class works at pretty much the same speed so the meal created can be enjoyed altogether at the end of the evening.
