I find chicken a little boring so don’t cook it much.
On the boat this weekend though, I had no other choice, so rummaged in the cupboards and came up with this.
You will need:
1 bag salt and pepper galletti
1 tbsp pesto (I used a ready made rucola one)
Crush the galletti and our into a plate.
whish the egg and ad the pesto, mixing well.
Cut the chicken breasts to half thickness.
Coat the chicken first with the egg and then the crushed galletti.
Either BBQ, grill or pan fry in butter. Serve with a rucola salad.
