There is a theme in my dinner party desserts, most of them include pears. I make no apology, this one, which is great after a smokey BBQ.
1 fennel bulb finely sliced
160ml Agave nectar
1tbsp lemon zest juice of half a lemon
Pinch of salt
2 large pears, cored and finely sliced
Frozen natural yogurt
Firstly, if you don’t have ready made frozen yogurt, pop a couple of small tubs in the freezer.
Put the fennel, agave nectar, lemon zest, lemon juice and sea salt in a pan over a medium heat and add 240ml water. Simmer for 10 minutes until the fennel is translucent.
Add the pears and cook for a further 15 minutes. Save the mixture and the juices and allow to cool. Once chilled, serve atop the frozen yogurt. Decorate with a few fine fennel fronds.
