Are you aware of the fact that today is homemade bread day? If not, here is a low-fat, gluten and lactose-free recipe you can easily prepare at home. The important ingredients are bananas and nuts. A delicious combination.
Ingredients:
7 ripe medium bananas, mashed
1/2 cup unsweetened apple sauce
2 1/2 cups gluten free flour (all purpose or brown rice)
1 1/2 tsp baking soda
1/2 tsp salt
4 tbsp butter, softened
1 cup light brown sugar
4 large egg whites
1 tsp vanilla extract
3/4 cup chopped walnuts (to your like)

Preheat the oven to 175°C. Spray two 20 x 12 cm nonstick loaf pans with baking spray or lubricate with butter, as preferred.
In a medium bowl, combine the flour, baking soda and salt with a wire whisk. Set aside.
In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick.
Add flour mixture and walnuts (to your like), then blend at low speed until combined. Make sure to not over mix.
Pour the batter into loaf pans and bake on the centre baking sheet for 45 to 50 minutes or until a toothpick inserted in the centre comes out clean.
Let the pan cool at least 20 minutes to bring it to room temperature before slicing.
The bread is best enjoyed still warm with a piece of butter or whatever you prefer.
