I actually make this at the office, the process is therapeutic and the result a treat!
Cube a honeydew melon and add a 1/4 of a jalapeño pepper (trust me) a good squeeze (60ml) Agave nectar and 2tbsp lime juice and 120ml water.
Mash up and mix thoroughly and put in a plastic freeze proof container in the freezer, covered (loosely) with the lid. Leave for 4 hours and scrape the surface, then pop back in the freezer till it reaches the desired consistency or until you are ready to eat.
