When it comes to barbecues, I am a firm believer that good company, good food, and good fuel (i.e. not instant-light charcoal) are the basis for a great one. However, there are times when I feel like going the extra mile and turning the humble BBQ into a full-on event. When I do, here’s what I aim for.
- Beyond Burgers & Sausages: I ain’t here to tell you not to throw a couple of dozen zalzett mir-roża onto the barbecue, because we all know that’s the best part of any cookout. But barbecues don’t have to be limited to the obvious. Instead, add some marinated chicken thighs, grilled halloumi, vegetable skewers, or local fish (we live on an island, guys!) to the menu and, believe me, the experience will automatically feel more put-together.
- Create Different Zones: If your terrace, roof, yard, or garden is big enough, then consider having different areas, such as one for drinks, one for cold food, one for cooked food, one for smokers, and the main seating area. They don’t need to be miles apart, but even just having different tables that help your guests flow as they pile food onto their plates or chill out makes a huge difference.
- Think About Lighting: The big light is okay when you’re outside and it’s dark, but some fairy lights or a nice stand light in a corner can add a bit of romance to the scene. Lighting really helps with the ambience.
- Leave the Drinks Indoors: When possible, consider leaving the drinks in the kitchen or somewhere air-conditioned. It will keep them chilled, and it will help the ice stay solid for longer. It also leaves you with more space outside for those areas we mentioned before.
- Prep, Prep, Prep: Finally, try to have as many things done before your guests arrive. This will mean you’ll feel less stressed during the proceedings and that you’ll actually be able to spend time with your guests. From my end, I usually only host these events when I have the day after free, so I don’t have to worry about doing the dishes that evening.
