If you are throwing an impromptu supper and don’t have time to marinade, how about making some herb butters to accompany your meat, fish, and breads?
75g salted butter, room temperature,
1 peeled garlic clove,
2 tbsp chopped basil,
2 tbsp chopped mint,
1 tbsp lemon juice.
Use a blender to beat the butter, once smooth, add the other ingredients, and mix well. Make a fat sausage shape with greaseproof paper and chill till required. Slice and serve, allowing to melt on hot food or spread on bread.
