Get a handful of Jerusalem artichokes, scrub and cut into half cm slices and add to a roasting tray of par boiled new potatoes. Season, sprinkle with olive oil and roast in the oven for 40 minutes at 180 C. Half way though the cooking time, you can add cherry tomatoes and a quartered lemon. This will tempt any carb-dodging dieter and gives life to a regular meat and two veg roast.
