Spread fig jam or pickle (mango chutney works well) over the pastry. Chop up any leftover melty cheeses and pile up to about 2 inches high (or use a whole Camembert or similar round cheese) then cover the cheese with the pastry, cover in eggwash and bake for 25 minutes at 180C.
