Leftover gammon magically transformed

We love gammon in our home, not sure why we only have it at Christmas. Maybe this year, I’ll create a Summer version. For any leftovers you may have, knock up this quasi bolognese for a quick supper and a change from turkey curry.

Cut enough gammon for your ‘number’ into small pieces
Fry a diced onion in olive oil or unsalted butter
Add the chopped gammon
Stir in a tin of tomatoes
Add a good glug of BBQ sauce (this neutralises the salty pork)
Add a couple of bay leaves

Heat through and serve with pasta (don’t add parmesan as its still quite salty) or spinach if like us, you’re cutting the carbs…..
