Mulled wine sauce – for poultry and game

You can pimp up any red meat or game with this seasonal sauce. This is enough for 4 servings.

150ml red wine vinegar

300g sugar

600ml red wine

1/2 cinnamon stick

8 cloves


Add all the ingredients to a pan and bring to a gentle simmer and then reduce. Remove the cinnamon stick and the star anise before serving.
