These are swift to prepare and impress guests; I keep a pot of the spice mix ready made for action!
Use 400g of lean minced lamb, to which you need to add 1 minced onion and 3 crushed garlic cloves. Then add 50g of currants and the same of pistachio flour, a smidgen of sweet paprika, ground allspice and ground cinnamon and mix well. Chop a good handful of mint and parsley and fold these in too.
Form ‘sausage’ shapes and then insert skewers to each, before brushing with olive oil and riddling for literally 3-4 minutes each side. Serve with yoghurt and pitta bread and a Middle Eastern salad.
