Posh Po Boys

I have a massive crush on Andy Bates cooking and he once made ‘po’ boys’ which are a Louisiana sandwich traditionally made with oysters or prawns for the ‘poor boys’ that worked the street cars. There are many varieties and I’m adding mine to the hall of fame. I must tell you that the photographer and food stylist devoured these once the shoot was done, and they were still gushing compliments a few days later.


Use 1 tin of M&S crab meat

Pinch of paprika


Unroasted cashew nuts roughly chopped

Zest and juice of 1 lemon

Pack of crisps, crushed (adjust your seasoning)

Dollop of M&S Gin and Cucumber relish

Watercress / shoots

Bread rolls / subs


Drain the crab. Roast the cashew nuts. Mash up all the ingredients together. Make patties of the mixture and brown in butter. Serve in a roll with extra Gin and Cucumber relish and watercress and shoots.
