Raid the cupboards and make tasty lunch boxes or quick suppers, in advance. For 5 meals you will need:
a handful of potatoes
2 salmon or chicken fillets
3 eggs
a packet of pancetta
half a pint of milk
a courgette
1 onion
bunch of Spring onions
some mushrooms
a loaf of bread
a pint of stock
some curry paste
mustard
lemon and a lime
some garlic and herbs
bag of watercress
175g rice
plain flour
a glass of wine (not for you)
All at once, but separately, boil the rice and the potatoes. These should take about 20 minutes. Boil 2 of the eggs for 7 minutes and cook the salmon in milk. While these items are cooking, chop and fry your pancetta and vegetables and beat an egg.
Assemble these meals and then the hardest part – choosing which to have first!
Meal 1 – potato, pancetta and egg salad
Meal 2 – salmon fish cakes (flake a salmon fillet, mix with 3 mashed potatoes, mustard, lemon juice, a slice of bread (broken into pieces) and some beaten egg, form in a pattie shape) shallow fry and serve with watercress.
Meal 3 – spicy rice. Use the rice, a teaspoons of curry paste, the courgette, mushrooms and fry together with some chopped onion then cook all the ingredients in some milk for a few minutes.
Meal 4 – make a watercress soup with the remaining leaves, chopped onion, vegetable stock and a couple of potatoes to thicken.
Meal 5 – the last day could offer up a kedgeree using the remaining rice, potatoes, salmon, the remaining egg and some curry paste to moisten.
