Smokey and salty: Goat cheese tapas with paprika, sun-dried tomatoes and capers

This delicious tapas recipe uses typical Spanish ingredients you can find at your local supermarket. It’s quick and easy to prepare and has a great combination of roasted garlic and paprika with fresh goat cheese, topped with sun-dried tomatoes and capers on rustic bread. Serves 4-6.

 

Ingredients:

4-5 cloves garlic

2 tbsp virgin olive oil

125-175g fresh goat cheese

1 ½ tsp paprika

¼ cup sun-dried tomatoes in oil

2-3 tbsp capers, drained

½ rustic baguette

Rucola

Balsamic vinegar

 

Remove the goat cheese from fridge and allow it to warm to room temperature.

Heat the oven to 350 degrees.

Place the unpeeled garlic cloves on a pan and drizzle a small amount of olive oil over the top. Place in the heated oven and roast for 15 minutes until garlic is soft. Remove and allow to cool.

Add the paprika to the goat cheese and mix. Squeeze the roasted garlic into the cheese. Add 1 tbsp olive oil and mix. The cheese will turn a pinkish-orange colour.

Cut the baguette into slices about. Spread the cheese mixture on each slice. Place sun-dried tomatoes and a caper or two onto each slice of bread.

Decorate sides of the plate with rucola and sprinkle with balsamic vinegar to your liking.
