Florina Silvio shares her Mutton Curry recipe with us
Popular at Christmas time in Pakistan is some sort of red meat curry, lamb, goat or mutton. Served with fresh naan bread or rice.
750g mutton piece
2 large onions
3 cloves garlic crushed
2tsp ginger paste
1 green chilli (optional)
1 large juicy tomato
1 cup plain yoghurt
½ tsp turmeric
1tsp ground coriander
1tsp ground cumin
1.In a heavy based pot, sauté onions in oil till translucent.
2.Add mutton, mix well, add garlic and ginger. Fry a bit on medium heat for 2-3minutes.
3.Add salt and turmeric and continue cooking on medium heat for further 2-3minutes.
4.Add paprika, cumin and coriander. Lower the heat and cook till spices get aromatic .
5.Add chopped tomatoes and cook till they turn into puree.
6.Then add chopped chilli (seeds removed) and a cup of yoghurt.
7.Cover with lid, keep stirring constantly till oil separates from sauce and meat is cooked through.
