These are great for the morning after the night before
100g of cheese
100g of cubed bacon / pancetta
225g of white flour
50g unsalted butter
1 tsp baking powder
1 tblsp milk
Preheat the oven to 180’C.
Grate the emmental or whatever cheese you are usuing. Melt the butter over a low heat. Beat the eggs together and then add the milk and the melted butter.
Sift the flour and baking powder into a large bowl. Add the milk and egg mixture and combine well to form a smooth dough. Fold in the bacon cubes and the grated cheese.
Spoon the mixture into muffin moulds, transfer to the oven and bake for 20 minutes or until golden brown.
Serve warm with butter and a good cup of tea.
